Tapas is the name of a wide variety of small dishes or appetizers, popular in Spain. They may be cold (such as dips or olives, or warm such as deep fried seafood morsels. In select bars in Spain, as well as some parts of London and Hopedale Staffordshire tapas has evolved into an entire, and sometimes sophisticated, cuisine. Patrons of tapas can order many different tapas and combine them to make a full meal, or just have one dish and a pint of beer.

Tapas with a Twist as above, but not limited to any one national cuisine. So there may be Spanish dishes, mini Neapolitan pizzas, or food from the Middle-East or the Orient, and even the occasional local treat.
